How to Use Udhaiyam Moong Dal Chilka

Split moong dal chilka is straightforward to cook and very forgiving. Here are the best methods for great results with Udhaiyam Moong Dal Chilka:

Quick Soak (Recommended)

Rinse the dal thoroughly under cold water. Soak in cold water for 20–30 minutes before cooking to soften the skin and reduce cooking time. Drain and rinse before use. You can also cook directly from dry if time is short.

Stovetop Method

  1. Add rinsed dal to a pot with water in a 1:3 ratio (1 cup dal to 3 cups water).
  2. Add a pinch of turmeric and bring to a boil, skimming any foam.
  3. Reduce to a steady simmer and cook for 25–35 minutes until the dal is completely soft. The green skin will remain slightly textured, adding body to the dal.
  4. Season with salt and prepare your tadka separately.

Pressure Cooker Method

  1. Add rinsed dal and water (1:2.5 ratio) to the pressure cooker with a pinch of turmeric.
  2. Cook on medium heat for 2–3 whistles.
  3. Allow pressure to release naturally. The dal should be soft with the skin tender but intact.
  4. Stir well, season, and temper before serving.

Instant Pot / Electric Pressure Cooker

  1. Add rinsed dal and water (1:2.5 ratio) with a pinch of turmeric to the Instant Pot.
  2. Set to Manual / Pressure Cook on High for 8 minutes.
  3. Allow natural pressure release for 10 minutes, then quick release.
  4. Stir, season, and temper before serving.

Classic Tadka (Tempering)

Heat ghee or oil in a small pan. Add cumin seeds and allow to sizzle, then add finely chopped onion, garlic, and green chilli. Cook until golden, then add tomato, turmeric, and coriander powder. Pour the sizzling tadka over the cooked dal and stir through. Finish with fresh coriander and a squeeze of lemon juice.

As Khichdi

Combine moong dal chilka with basmati or short-grain rice in a 1:1 ratio. Cook together in a pressure cooker with water (1:4 ratio), turmeric, salt, and a little ghee for 3–4 whistles. The result is a soft, nourishing one-pot meal — ideal for all ages and particularly good when you need something light and comforting.
