How to Use Udhaiyam Idli Rice

Udhaiyam Idli Rice is used primarily to make idli and dosa batter. Here is a complete, step-by-step guide to making authentic batter and using it for both idlis and dosas:

Idli & Dosa Batter (Traditional Method)

Ratio: 3 parts idli rice to 1 part whole urad dal (split urad can also be used)

  1. Soak: Rinse the idli rice and urad dal separately under cold water. Soak each in plenty of cold water for a minimum of 4–6 hours, or overnight for best results. Add a small handful of cooked rice or poha (flattened rice) to the soaking rice — this helps achieve a softer, more airy batter.
  2. Grind the Urad Dal: Drain the soaked urad dal and grind in a wet grinder or high-powered blender, adding cold water gradually, until you achieve a very smooth, light, and airy batter. This step is critical — the urad batter should be almost mousse-like in texture. Transfer to a large bowl.
  3. Grind the Rice: Drain the soaked idli rice and grind to a slightly coarser, smooth batter, adding cold water as needed. The rice batter should be smooth but with a very slight graininess compared to the urad batter.
  4. Combine: Mix the rice and urad batters together thoroughly. Add salt to taste and mix well. The combined batter should have a thick, pourable consistency — similar to thick pancake batter.
  5. Ferment: Cover the bowl loosely and leave at room temperature for 8–12 hours (or overnight) until the batter has risen noticeably and is bubbly and slightly sour-smelling. In cooler European climates, fermentation may take longer — place the bowl in a warm spot such as an oven with just the light on, or near a radiator.

Making Idlis

  1. Grease idli moulds lightly with oil.
  2. Pour the fermented batter into the moulds, filling each about three-quarters full.
  3. Steam in an idli steamer or pressure cooker (without the weight) for 10–12 minutes on medium heat.
  4. Insert a toothpick — if it comes out clean, the idlis are ready. Allow to cool for 2 minutes before removing.
  5. Serve hot with sambar and coconut chutney.

Making Dosas

  1. Heat a flat non-stick or cast iron pan (tawa) on medium-high heat. Sprinkle a few drops of water — if they sizzle and evaporate immediately, the pan is ready.
  2. Pour a ladleful of batter onto the centre of the pan and spread quickly in a circular motion to form a thin, even round.
  3. Drizzle a little oil or ghee around the edges.
  4. Cook until the edges turn golden and the surface looks dry, then flip for a further 30 seconds if desired.
  5. Serve immediately with sambar, coconut chutney, or potato masala filling for masala dosa.
