How to Use Udhaiyam Foxtail Millet 500G

Udhaiyam Foxtail Millet 500G can be used as a direct substitute for rice in most recipes, or cooked in its own right as a nutritious porridge, upma, or khichdi. Here are the best methods:

Basic Cooking Method (Rice Substitute)

  1. Rinse the millet thoroughly under cold water 2–3 times until the water runs clear.
  2. Optional: Soak for 20–30 minutes to reduce cooking time and improve digestibility.
  3. Add millet and water in a 1:2 ratio (1 cup millet to 2 cups water) to a pot.
  4. Bring to a boil, then reduce to a low simmer. Cover and cook for 15–18 minutes until all water is absorbed.
  5. Remove from heat, leave covered for 5 minutes, then fluff with a fork before serving.

Pressure Cooker Method

  1. Add rinsed millet and water (1:2 ratio) to the pressure cooker.
  2. Cook on medium heat for 2 whistles.
  3. Allow pressure to release naturally before opening. Fluff and serve.

As Foxtail Millet Upma

  1. Dry roast the millet in a pan for 2–3 minutes until lightly golden and fragrant. Set aside.
  2. In the same pan, heat oil and add mustard seeds, curry leaves, dried red chilli, and chopped onion. Cook until soft.
  3. Add vegetables of your choice (carrot, peas, beans) and cook for 3–4 minutes.
  4. Add water (1:2 ratio to millet), bring to a boil, then add the roasted millet.
  5. Stir well, cover, and cook on low heat for 12–15 minutes until the millet is cooked through. Finish with lemon juice and fresh coriander.

As Foxtail Millet Khichdi

  1. Combine rinsed foxtail millet and moong dal in a 1:1 ratio.
  2. Add to a pressure cooker with water (1:3 ratio), turmeric, salt, and a little ghee.
  3. Cook for 3 whistles and allow natural pressure release.
  4. Stir well and serve with yoghurt or pickle for a light, nourishing meal.

As Foxtail Millet Porridge (Kanji)

  1. Add rinsed millet to a pot with water or milk in a 1:4 ratio.
  2. Cook on low heat, stirring occasionally, for 20–25 minutes until thick and creamy.
